So I'm used to this w/ my old Duc:

But you'd always scrape your body before the bike would scrape on that bike. ... how low can the 599 get.. I don't plan on tracking it anytime soon, and I've never ridden such an upright moto, but I'd like to know what I'm in for before it hit's the ground.

Just progessively build up speed through corners until you find it? I've come very close to putting the peg on the ground with sport-touring tires and less than a year of experience, so I'm sure you can do it no problem. If you do insist on leaning that far, you might get some aftermarket rearsets. The stock pegs definitely don't have the clearance of a supersport...

The stock pegs also have a screw underneath them that can be taken off and will give you a few more degrees of clearance. I went riding up highway 1 on Sunday and scraped that screw for the first time. Kinda scary.

ohhh!

There's a video on here of LeatherWings going around a corner scraping his peg. You can see that lean angle and you can also hear the scrape from the peg. The research has been done!

OHHH!! Thanks for that!

Well that's plenty of lean for a street bike.. ya, scraping is scary... but for some reason I feel more comfortable knowing ahead of time if the pegs scrap on a bike or not before I discover that on my own (even some super bikes do: i.e. ZX-6 unless you replace the sets)

I discovered how far over I could get last Sunday on the track. On one fast right-hand I hit the line the best I had all day, but a little hot and the peg scraped for a bit. I have the rightmost set of pegs from Oberon seen here (http://www.oberon-performance.co.uk/acatalog/Honda_CB600F.html). On the other hand, I wasn't hanging off, either. So I figure I wasn't over 30 degrees from the track surface.

Those pegs look cool.. but are they a different shape then stock?

Yes, they are cut on a slant underneath almost the same as race pegs. The stock pegs are more like a full barrel shape. Without the feelers on the stockers, the difference probably isn't more than 3 or 4mm since they're mounted at the same point. The Oberon pegs are also a little shorter, by about the same amount.
